I normally serve it with steak or hamburgers, but every time I wonder why I even bothered with the meat. All I want is a big bowl of this salad!<\/em><\/p>\n<p><em>This recipe is part of our <a title=\"Memorial Day Menu\" href=\"https:\/\/www.appliancefactoryparts.com\/blog\/2010\/05\/memorial-day-menu\">Memorial Day Menu<\/a>.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 pounds (6 medium) potatoes, scrubbed (red potatoes work the best for potato salad, they hold together better instead of turning to mush)<\/li>\n<li>\u00c2\u00bc cup cider vinegar<\/li>\n<li>Salt and pepper<\/li>\n<li>6 slices of bacon (or more depending on how bacony you want it)<\/li>\n<li>3 or 4 hard boiled eggs<\/li>\n<li>1 stick of celery<\/li>\n<li>Half a small red onion<\/li>\n<li>3 small pickles (dill or sweet, your choice \u00e2\u20ac\u201c I used dill since they\u00e2\u20ac\u2122re my favorite)<\/li>\n<li>\u00c2\u00bd a handful of fresh parsley (preferably flat leaf Italian parsley)<\/li>\n<li>\u00c2\u00bd cup mayonnaise<\/li>\n<li>2 teaspoons mustard (preferably use Dijon or a strong mustard)<\/li>\n<\/ul>\n<p><strong>Step 1: The Potatoes<\/strong><\/p>\n<p><strong><a href=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9046.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-909\" title=\"IMG_9046\" src=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9046-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><a href=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9076.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-911\" title=\"IMG_9076\" src=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9076-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><a href=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9079.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-912\" title=\"IMG_9079\" src=\"https:\/\/www.appliancefactoryparts.com\/blog\/wp-content\/uploads\/2010\/05\/IMG_9079-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\n<\/strong><\/p>\n<p>&#8211; Keep the potatoes whole, but cut out any bad spots. Put them in a pot and cover them with water. Simmer until a sharp knife or a skewer can poke through them easily. This should take around 25-30 minutes, but will depend on how large your potatoes are.<\/p>\n<p>&#8211; Drain and let the potatoes cool slightly before cutting into \u00c2\u00be inch cubes. (Make sure to use a very sharp knife, or even better, use a serrated one. This will help give clean cuts through the skin.)<\/p>\n<p>&#8211; Put the potato cubes in a bowl and toss with the vinegar, salt and pepper (about \u00c2\u00bd teaspoon of each).
